This study was being undertaken to examine the cost structure of the UK fish retail sector. The outcome of the research was assessment of the efficiency of the sector and its importance to the fish sector as a whole. The principal information required was how each pound realised through the sale of fish was split between the costs of purchase, capital costs, fixed/variable costs, and profit. Information was gathered through semi-structured interviews with multiple retailers, fish mongers, freezer centres and fish market stalls/mobile vans.
